I always wanted to become a chef. But, it’s not all roses and good food. Working in a busy kitchen can test every ounce of patience in your being. When I completed my high school education, the next step was culinary school. However, I wanted a break to travel so I took a gap year to go to Europe with some friends. We’d been working and saving all summers since we were 15, and the trip was worth it. I saw different places and enjoyed amazing cuisine which made me even more convinced I wanted to become a chef. I joined and completed culinary school, then it was off to the working world. My first job was at a local restaurant, and it was a nightmare since the place had the worst heating and cooling. The owners were of Spanish origins, and they made excellent food that the community loved. But, they did little to make the place comfortable, especially when it came to heating and cooling. One summer, it was so hot outside, and twice as bad in the kitchen, so we staged a sit in. No one had bothered to do maintenance on the AC, and the kitchen felt like being inside of a furnace. We complained about the kitchen being too hot endlessly, but the owners rarely listened until the head chef led the sit in. That’s when the HVAC expert showed up to ease our discomfort by sorting out the air conditioning problems. She suggested the owners had to invest in a commercial HVAC system if they wanted the establishment to thrive. Otherwise, it would be hard eating or working there without proper air conditioning in the middle of a heat wave.
